It was almost hard to remember that the spectacular hillside vineyards of the winery T-Oinos, which arguably makes Greece’s greatest wines, are just a 30-minute speedboat ride from the high-energy, party world of Mykonos.

A man of art, the French Stéphane Derenoncourt, who has been advising T-Oinos for two years, has prohibited irrigation, safe assistance to the vineyards, in favor of deep rooting, demanding but beneficial to the quality of the fruits."
