VINIFICATION
Use of indigenous yeasts following research
for the yeast identification and selection from the parcels
Depending on the wine:
WHITE WINES
Pressed in whole bunches. Light, natural clarification. Vinified and then aged in large wooden barrels and in amphorae. Ageing in lees for 7 to 11 months depending on the wines’ evolution
RED WINES
Whole berry grapes partly with whole clusters in open wooden vats or in stainless steel tanks for a temperature-controlled fermentation. Gentle extraction with some punching down by hand. The time of maceration is decided at the tasting. Ageing in 500 lt oak barrels and/or amphorae for 8 to 16 months
